Pour the cheese mixture into the caquelon (fondue pot) and, stirring constantly, slowly bring it to a gentle simmer over medium heat—then let it bubble softly for at least 3 minutes until beautifully smooth and creamy!

Season to taste with pepper and nutmeg, or enrich with a little kirsch. Keep stirring until the fondue is silky-smooth.
