In our various cheese cellars, selected cheese specialities receive exactly what they need: time, care and a deep understanding of cheese. Depending on the variety, they mature with us for up to 36 months until they develop their full character.
We combine traditional craftsmanship with modern cellar technology: the wheels are regularly cared for, turned and checked – partly by hand, partly with the support of technology. This allows us to ensure that every speciality matures professionally and develops its typical aroma, texture and personality.
In every cheese speciality from our cheese cellar, you can taste the artisanal care, high quality standards, passion for perfection and love of Swiss cheese tradition. Or, to put it simply: with us, cheese does not just get time – it gets attention.
Processing
We bring cheese into shape.
Every cheese is different. And every customer needs it in a slightly different way. That is why we process cheese exactly as it will later be used: as portions, slices, cubes, blocks, grated cheese or blends. It is not only about formats, but also about experience, care and a good feel for the product.
